Yuca Fries With Spicy Mayo

Ingredients 

– 2 pounds yuca (cassava), peeled and cut into fries – Salt, to taste – Water, for boiling – Oil, for frying For Spicy Mayo: – 1/2 cup mayonnaise – 1 tablespoon sriracha or hot sauce – 1 teaspoon lime juice – 1 garlic clove, minced

Peel the yuca and cut it into thick fry-shaped pieces. Make sure to remove the fibrous core in the center before cutting into fry sizes.

Instructions

Boil the yuca in salted water for about 15-20 minutes or until it becomes tender but not too soft. Drain and let them cool slightly.

Heat oil in a deep pan or fryer. Once hot, carefully fry the boiled yuca pieces until golden brown and crispy on all sides.

While the fries are cooking, mix the mayonnaise, sriracha, lime juice, and minced garlic in a small bowl until fully combined and creamy.

Once the yuca fries are golden and crisp, remove them from the oil and place on paper towels to drain any excess oil.

Sprinkle the fries with salt while they’re hot. Serve immediately alongside the spicy mayo dipping sauce for best flavor.
