Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper. In a bowl, whisk together the flour, baking soda, baking powder, and salt.

In a separate large bowl, cream the softened butter and sugar until light and fluffy. Beat in the egg, vanilla extract, and almond extract if using.

Gradually mix in the dry ingredients until a soft dough forms. Roll the dough into 1-inch balls and place them on the prepared baking sheets about 2 inches apart.

Flatten slightly with the bottom of a glass and sprinkle with colored sugar or decorations. Bake for 8–10 minutes or until the edges are lightly golden.

Let the cookies cool on the sheet for a few minutes before transferring to a wire rack. Once cooled, you can decorate them with royal icing or glaze for a festive Easter touch.
