Stuffed Pepper Soup Recipe

Ingredients 

– 1 lb ground beef – 1 cup chopped onion – 1 cup chopped green pepper – 1 can (14.5 oz) diced tomatoes – 1 can (15 oz) tomato sauce – 3 cups beef broth – 1 cup cooked rice – 1 tsp Italian seasoning – Salt and pepper to taste

In a large pot over medium heat, cook ground beef until no longer pink, breaking it apart as it browns. Drain excess fat if needed.

Instructions

Add chopped onion and green pepper to the beef. Cook for 5 minutes until vegetables are softened, stirring occasionally for even cooking.

Stir in diced tomatoes and tomato sauce. Mix well to combine all ingredients and bring the mixture to a light simmer.

Pour in the beef broth and add Italian seasoning. Stir well and let the soup simmer on low heat for about 20 minutes.

Add cooked rice to the soup and mix it in gently. Cook for an additional 5-10 minutes until everything is heated through.

Taste the soup and season with salt and pepper as needed. Stir and let it rest a few minutes for flavors to blend.

Serve hot in bowls with optional toppings like shredded cheese or fresh parsley. Perfect for a cozy, hearty meal anytime!
