New England Apple Cheddar Galette Recipe

Ingredients

For the Cheddar Crust: – 1¼ cups all-purpose flour – ½ cup cold unsalted butter, cubed – ½ cup sharp cheddar cheese, grated – ¼ teaspoon salt – 3–4 tablespoons ice water For the Filling: – 2 medium apples, thinly sliced – 2 tablespoons granulated sugar – ½ teaspoon cinnamon – 1 tablespoon lemon juice For Assembly: – 1 egg, beaten (for egg wash) – Optional: coarse sugar for sprinkling

Pulse flour, butter, salt, and grated cheddar in a food processor. Add cold water to form dough, chill for 1 hour before rolling.

Instructions

Thinly slice apples, toss with sugar, cinnamon, and lemon juice. Let sit briefly to draw out moisture before filling the crust.

Roll dough into a circle, layer apple mixture in the center, fold the edges over, brush with egg wash, and bake at 400°F for 35–40 mins.

Let the galette cool slightly before slicing. Serve warm or room temp—ideal with vanilla ice cream or a sharp cheddar slice on the side.

This galette features classic New England flavor—cheddar in the crust, spiced apples inside. Rustic, refined, and bursting with contrast.
