Easy 2-Ingredient Ice Cream Sandwiches

Ingredients 

– 1 pint of your favorite ice cream (vanilla, chocolate, or any flavor) – 1 package of soft cookies (chocolate chip, sugar, or oatmeal)

Let the ice cream sit at room temperature for 5–10 minutes to soften slightly. This makes it easier to scoop and spread.

Instructions

Scoop a generous spoonful of softened ice cream onto the flat side of one cookie. Top with another cookie and press gently.

Use a butter knife or spatula to smooth the ice cream edges for a clean look. Wipe any excess for easy serving.

Place assembled sandwiches on a baking sheet and freeze for at least 1 hour, or until firm and set.

Serve straight from the freezer for a cool, creamy treat that’s perfect for summer parties or an easy weeknight dessert.
