Easy Huevos Motuleños Recipe

Ingredients 

– 4 eggs – 4 corn tortillas – 1 cup cooked black beans (refried or whole) – 2 ripe plantains, sliced – 2 medium tomatoes – 1/4 onion – 1 garlic clove – 1/4 cup frozen green peas – 1/4 cup crumbled queso fresco – Salt and oil (for frying and seasoning)

Blend tomatoes, onion, garlic, and a bit of water. Simmer in a pan with oil and season with salt until it forms a smooth, flavorful sauce.

Instructions

Lightly fry corn tortillas in oil until just crisp. Drain on paper towels and set aside as the base layer of the dish.

Fry eggs sunny-side up or over-easy in a skillet with a little oil. The yolks should be soft and just set for traditional texture.

Spread warm black beans over each fried tortilla. Top with a fried egg, spoonfuls of tomato sauce, green peas, and crumbled queso fresco.

Fry ripe plantain slices until golden and caramelized. Serve them alongside or over the eggs for authentic sweet-savory contrast.
