Easy Zucchini Carrot Bread

Ingredients 

– 1 cup grated zucchini – 1 cup grated carrot – 1¾ cups all-purpose flour – ¾ cup granulated sugar – ½ cup vegetable oil – 2 large eggs – 1 teaspoon vanilla extract – 1½ teaspoons baking powder – ½ teaspoon baking soda – 1 teaspoon cinnamon – ¼ teaspoon nutmeg – ¼ teaspoon salt – ½ cup chopped walnuts or raisins (optional)

In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt until evenly combined.

Instructions

Beat together eggs, sugar, oil, and vanilla. Stir in the grated zucchini and carrots until evenly mixed and slightly softened.

Add dry ingredients to the wet and stir until just combined. Pour into a greased loaf pan and bake at 350°F for 50–60 minutes.

Let the bread cool completely before slicing. Enjoy plain, with butter, or a smear of cream cheese for a delicious anytime treat.
